Mud Pie

1/2 package Nabisco Chocolate Wafers or prepared chocolate cookie crumb crust

1/4 cup butter melted

1 gallon coffee ice cream, softened

1 1/2 cups chilled fudge sauce

Sweetened whipped cream or purchased whipped topping

Slivered almonds

 

Whirl chocolate wafers into fine crumbs in food processor. Add butter, whirl another 5 to 10 seconds. Press crumb mixture firmly and evenly into a 9 inch pie plate. Spread soft ice cream over piecrust. Freeze until firm. Top with fudge sauce (place fudge sauce in freezer for a time to make spreading easier). Place in freezer 10 hours to set. Place slices on chilled plates, top with whipped cream and slivered almonds. Enjoy!

It all started in 1978. Suzanne Smith and another parent thought the 420 students in Saints Peter and Paul School deserved something more than a sack lunch everyday. For six years, once a month during the school year, the two mothers came to the school and cooked a hot lunch for the students. In 1982 a woman asked Suzanne if she could do a rehearsal dinner for a wedding.  She said she could and Food for Thought Catering became a full time business.

“Fortunately I had a mentor,” said Suzanne. “The owner of the popular Swiss Bells restaurant in Wheat Ridge took me under his wing and showed me how to manage food and control costs.”  Today Suzanne caters everything from small intimate dinners for just two to events for up to 250.  What is her favorite? “I really love taking a meal to older people or those recovering from an illness.  My staff loves those very special occasions such as graduation parties and rehearsal dinners.”
